High Protein Vegetarian Stew Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup vegetable broth
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley or cilantro, chopped (for garnish)
High Protein Vegetarian Stew Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until fragrant.
- Add the bell peppers, carrots, and celery and cook for another 5 minutes.
- Add the diced tomatoes (with their juice), chickpeas, kidney beans, black beans, vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, until the vegetables are tender and the flavors have melded together.
- Taste and adjust seasonings as necessary. Serve hot, garnished with fresh parsley or cilantro.
