Quinoa and Chicken Bowl Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 tablespoon olive oil
- 2 chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup chopped broccoli florets
- 1 cup sliced mushrooms
- 1/2 cup chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro
Quinoa and Chicken Bowl Instructions
- In a medium saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the water has been absorbed and the quinoa is tender.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes.
- Add the bell peppers, broccoli, mushrooms, red onion, garlic, cumin, chili powder, salt, and pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes.
