Quinoa and Chicken Bowl Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 2 chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup chopped broccoli florets
  • 1 cup sliced mushrooms
  • 1/2 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro

Quinoa and Chicken Bowl Instructions

  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the water has been absorbed and the quinoa is tender.
  2. While the quinoa is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes.
  3. Add the bell peppers, broccoli, mushrooms, red onion, garlic, cumin, chili powder, salt, and pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes.
  4. To assemble the bowls, divide the cooked quinoa between four bowls. Top with the chicken and vegetable mixture, and sprinkle with chopped cilantro.
